Quick, healthy and easy courgette soup

Ingredients
  • Courgettes 300g
  • Onion 120g
  • Butter 1tsp
  • Medium garlic cloves 2
  • Fat Free Dorset Strained Yoghurt 1tbsp
  • Vegetable stock 100ml
  • Knorr mixed herbs flavour pot* 1
  • Salt & pepper
  • + Crispy bacon rashes (optional garnish)
  • * or 2 tsp oregano, 2 tsp basil, 3 tsp mixed herbs
Method
  • Peel and dice the onion, place in heavy bottomed saucepan with butter. Sweat for 5 minutes.

  • Peel and chop the garlic, add to onion and cook for 2 minutes.

  • Dice the courgette and add to onion.

  • Add the stock and seasoning (very little stock is required as courgettes carry a lot of water)

  • Leave to simmer gently for 25 minutes or until vegetables are soft. Add DSY and blend (either using a handle held blender in the pan or in a blender).

  • Delicious with a sprinkling of crispy bacon on top.
