- Courgettes 300g
- Onion 120g
- Butter 1tsp
- Medium garlic cloves 2
- Fat Free Dorset Strained Yoghurt 1tbsp
- Vegetable stock 100ml
- Knorr mixed herbs flavour pot* 1
- Salt & pepper
- + Crispy bacon rashes (optional garnish)
- * or 2 tsp oregano, 2 tsp basil, 3 tsp mixed herbs
Peel and dice the onion, place in heavy bottomed saucepan with butter. Sweat for 5 minutes.
Peel and chop the garlic, add to onion and cook for 2 minutes.
Dice the courgette and add to onion.
Add the stock and seasoning (very little stock is required as courgettes carry a lot of water)
Leave to simmer gently for 25 minutes or until vegetables are soft. Add DSY and blend (either using a handle held blender in the pan or in a blender).
Delicious with a sprinkling of crispy bacon on top.
