Dorset Dairy Brandy Cream

Ingredients
  • 500g WHOLE MILK DORSET STRAINED YOGHURT
  • 2 CLEMENTINE
  • 4 CLOVES
  • 2 CINNAMON STICKS
  • 2tbsp HONEY
  • 4tbsp BRANDY
Method
  • Peel the zest from one of the clementines and juice both of them.

  • Combine the juice, the peel, cinnamon, cloves and honey into a saucepan and bring to a gentle simmer. Reduce until it turns into syrup (5-10 mins).

  • Sieve the mixture into a bowl and allow to cool.

  • Stir in the brandy and the strained yoghurt. Chill until ready to eat.
